Pea & Ham Soup recipe

This Sunday I made soup.  Despite it (supposedly) being summer, it's been miserable here and when I spotted some delicious looking pulled ham in Tesco, rather than thinking salad, I instantly thought soup!

I searched Pinterest and Google for a Pea & Ham soup recipe (most of them used ham hocks on the bone cooked in the soup so weren't suitable) and ended up finding three that used pieces of cooked ham and pretty much made up my own recipe using them as a basic guide.  Here is what I did...

Ingredients:

1 tbsp sunflower oil
1 onion, chopped
2 cloves crushed garlic
4 celery sticks, chopped
2 large carrots, peeled & chopped
80g yellow split peas (would have used green but I had yellow)
1.4 litres of chicken or veg or ham stock (I used one ham and one chicken stock cube)
250g pulled ham
350g frozen peas
salt & pepper to taste



Method:

Heat the oil in a large pan, add the chopped vegetables and garlic and cook for 5 mins over a gentle heat.  Add the split peas and stock and bring to the boil.



Cover and simmer gently for 50 minutes.  Add 150g of the ham and 250g of the frozen peas and simmer for a further 10 minutes.  Take off the heat and blend to your desired consistency, season to taste (bear in mind the ham may be very salty so taste before adding salt).

Add the remaining frozen peas and ham and heat through gently for around 5 minutes.  Serve with crusty bread & butter.
